Our pumpkin pie is far from simple and tastes like a warm fall. The shell is a buttery whole grain spelt dough and layers of pumpkin were slightly cooked in a spice syrup, enough to open up the natural sweet flavor of the kabocha and still have a crunchy texture. To involve all the crunchy textures we have smoked pumpkin puree and a salty cinnamon cream on top to balance and same time highlights the spice syrup depth.
